Tommy Watkins started Watkins Milling Company over 50 years ago as a third-generation miller. The original mill was located in Matthews, Georgia. Due to strict government regulations (and a building over 100 years old) we built a new facility in 2016 on our family land. We left the old historic building and created a new and improved process. Tim Watkins now runs the company as a fourth-generation miller. Over the years we have developed and learned methods to make the process very efficient but provide the same great quality for which the Watkins have always been known. Some customers have even stated that Watkins Milling is one of Georgia’s best kept secrets!
As of right now we offer a 24oz and a five lb. bag of plain white sifted stone ground corn meal.
(Gluten Free, No Additives and No Preservatives, and it maybe the only cornmeal still on the market that is 100% whole grain corn and nothing more.)

Cornmeal Breakfast Waffles
These cornmeal waffles are high on our breakfast-favorites list – especially this time of year when there is so much amazing fruit in season. They are made with yogurt, low-fat milk, honey and olive oil. Of course, we top them with honey butter and fresh fruit for a real decadent treat!

3 eggs
2 1/2 cups buttermilk
1/2 stick butter (melted)
1 1/4 tablespoon sugar (to taste)
2 1/2 teaspoons salt (to taste)
2 1/2 cups Watkins Corn Meal
1 1/4 teaspoons baking soda
1 1/2 tablespoons cold water
3 1/4 teaspoons baking powder
Preheat oven to 450 degrees. Place greased 9-inch cast iron skillet, metal baking pan or corn muffin pan in ove

1/2 stick butter (melted)
1 1/4 tablespoon sugar (to taste)
2 1/2 teaspoons salt (to taste)
2 1/2 cups Watkins Corn Meal
1 1/4 teaspoons baking soda
1 1/2 tablespoons cold water
3 1/4 teaspoons baking powder
Preheat oven to 450 degrees. Place greased 9-inch cast iron skillet, metal baking pan or corn muffin pan in oven to heat. Beat eggs until light. Add next 4 ingredients & blend well. Carefully blend in cornmeal a little at a time. Dissolve baking soda in the cold water, add to cornmeal mixture. Sift baking powder, add to cornmeal mixture. Stir well. Pour mixture into heated & greased cast iron skillet or metal baking pan or corn muffin pan and bake 20 to 25 minutes or until golden brown. Brush top with butter. Yelds one 9-inch pan or 8-12 muffins.

1 1/2 tablespoons salt ( or to taste)
2 medium or 1 jumbo onion- diced finely or pureed
2 cups Watkins fresh country corn meal
1 cup buttermilk
1 tablespoon baking powder
1 tablespoon self-rising flour
Beat eggs and salt lightly together. Add onions and mix well. Gradually add Watkins Fresh Country Meal and buttermilk;

2 cups Watkins fresh country corn meal
1 cup buttermilk
1 tablespoon baking powder
1 tablespoon self-rising flour
Beat eggs and salt lightly together. Add onions and mix well. Gradually add Watkins Fresh Country Meal and buttermilk; mix well. Add baking powder and mix well into Hushpuppy mixture. Drop by spoonfull into 375 degree fish grease. Remove when golden brown and drain on paper towels.
Yields about 40 Hushpuppies if a teaspoon is used.

mixing bowl. Mixture should be thin enough to spread
easily when poured into hot skillet. Add a little vegetable
oil to skillet before each patty. Using a large spoon or
gravy
2 cups Watkins Fresh Country Meal
1 Tablespoon salt (To Taste)
2 ½ cups milk, buttermilk, or water (Your Taste)
Pre-heat greased cast iron skillet. Mix ingredients in
mixing bowl. Mixture should be thin enough to spread
easily when poured into hot skillet. Add a little vegetable
oil to skillet before each patty. Using a large spoon or
gravy/soup ladle, place one measure of mixture into hot,
comma greased cast iron skillet and allow it to spread.
Flip over and brown both sides. Yields approximately
18 patties if using a five-inch skillet.
